
We are at that time of the year, when we love to prepare fast, simple meals with few fresh ingredients, which have the taste and flavour of Summer. For this reason, here we have a dish that may be well appreciated and served both warm or fresh, according to your personal taste.
Choose the shape of pasta you love. Go for some fresh basil pesto sauce. For this occasion, I chose a lighter basil pesto sauce without garlic, even though I generally like to add garlic as ingredient when I cook. Fresh ricotta (cow or sheep milk) cheese is the third main ingredient for preparing this delicious meal.
Start with boiling water, where you will cook your preferred pasta. Add a sprinkle of sea salt. In the meanwhile, prepare your sauce very quick mixing well basil pesto, ricotta cheese together and adding also some table spoons (two or three) of boiling water to the creamy mixture. Drain pasta when it is al dente, add the sauce of basil pesto and ricotta cheese you just made.
Serve the dish warm or fresh and add some juicy, cherry, caramelized tomatoes flavoured with chopped onions and garlic on top if you like.
