Pumpkin balls and variations. Let’s party

Sometimes the inspiration for a particular dish to make comes out of the blue. Then, if you have got the right ingredients in your pantry, it is possible to bring that gastronomic idea to the table in a very short time. In addition to this, the further you go in the execution, the more the chances of variations from the main recipe increase.

Find the right proportions of ingredients for yourself. It is necessary to keep in mind that the choice of pumpkin is decisive, since it is a vegetable that contains water. Therefore, the mixture must be very consistent and compact as if it were a meatball mixture.

For these delicious pumpkin balls, basically, you need the following ingredients: pumpkin, egg, grated Grana Padano cheese, breadcrumbs, nutmeg and chilli powder, parsley, salt, chopped onion and a hint of garlic.

It is necessary to taste the mixture while working it to find a right balance, adding more or less quantities of the various ingredients according to your personal taste.

Make balls between the palms of your hands and roll them in breadcrumbs before gently dipping them into the pan to fry.

If you want to get a stronger flavor, add a drop or two of gorgonzola and mascarpone cheese in the middle of the pumpkin mixture. Lightly press the balls and make crisp croquettes out of them. You will enjoy a refined tasteful appetizer.

As an additional variation and alternative to the savory flavor, you can serve these delicious little pumpkin balls hot with some home made pomegranate syrup, for example. It will be a sweet snack for your coffee break.
