Glad all Saints’ Day.

During this period, the pumpkin is used as main ingredient of many tasty dishes. For those who want to have a small snack or an aperitif before dinner, here are some light crunchy pumpkin schiacciatine. Their preparation is very easy to do without leavening indeed.

The ingredients that you need are: 400g of flour, 150g of chopped raw pumpkin, chopped rosemary, 70ml of water, 10g of salt and 30g of extra virgin olive oil.

Put the flour, chopped pumpkin, rosemary, water, salt in a bowl and work all together until you get a smooth dough. Let the dough rest in the fridge for 30 minutes. Then, roll out the dough with a rolling pin and place the schiacciatine dough in an oiled pan. Brush the surface of the schiacciata with little oil and place it in the oven for 10 minutes at 250*C.

Serve the schiacciatine warm and crunchy with what you prefer best, that is, cold cuts, different kind of cheese or vegetables in pinzimonio and enjoy your aperitif.
