Aunt Gina’s meatloaf prepared for the holidays is always good. We loved it when we were kids. All little cousins sitting around our square table waiting for the meatloaf to be served. Now we prepare it ourselves, according to tradition, stuffing it with thin slices of provola, mortadella and… don’t worry, Aunt Gina, we didn’t forget to add the hard-boiled eggs too.
Before putting the meatloaf in the oven, fry it all around to make a crispy crust that will prevent all the meat juices and filling from coming out.
We wish everyone a happy May Day.
