Veggie burger

Hello, it has been a very busy time, soon it will be the weekend again and I’m going to prepare a fast meal. Indeed, there is some of a rich tasteful soup left in the fridge from last night. “Minestrone” is how we call the vegetable soup in Italy and mine is really tasteful, made with a lot of vegetables, that is potato, sweet potato, tomato, carrot, beetroot, savoy cabbage, aubergine, bell pepper, cauliflower, broccoli, artichoke, onion, garlic.

I guess it is a great idea to make burgers of it, don’t you think? No eggs are necessary, but generous handfuls of breadcrumbs and grated Grana Padano cheese to add. You can mash vegetables grossly with a fork and mix all together until you have the right consistency like for meatballs. Work with your hands, place the vegetable burgers on a baking tray with a drizzle of extra olive oil on their surface and leave them in the oven to cook for about 15 minutes/180°C.

These vegetable burgers are easy to cook and gain wide approval for their lightness, since it is not necessary to fry them. Any way, they are crisp on their golden surface and soft inside. What is more, you can serve them in home made bread rolls with a sauce prepared with yougurt and herbs and more steamed vegetables as a side dish to the delight of younger and older children.
