
It is only one week for Easter Day and, this afternoon, we gave space to local tradition and creativity. We enjoyed baking some inviting “cuddure”, from the ancient Greek “κολλύρα, kollýra“.
It is a simple mixture made of 500 gr all purpose flour, 125 gr sugar, 3 eggs, 18 gr baking powder, 100 gr lard and little warm water. For the occasion, we weaved a nest and fixed a boiled egg in the centre of it. Also, we loved weaving a basket and gave shape to small geese, doves, chicken and flowers.
A thin layer of egg on the surface, a sprinkle of tiny colorful pearls of sugar and in the oven for about 15/20 minutes (160°C). At last, when they got cooler, out of the oven, we decored the basket by adding little eggs made of an almond and covered with chocolate.
