Apple pie or rustic cake with tomatoes, leeks and Grana Padano cheese?

Apple cake

The new week started and after work hours it is nice to enjoy an appetizer or a piece of cake in good company. Here I just baked a crisp puff pastry stuffed with leek, zucchini and small cherry tomatoes already sautéed with a knob of butter, a sprinkling of sea salt, black pepper and grana padano on the surface.

What is more, when in doubt for salt or sweet taste, of course you can’t miss a simple glorious apple pie on the snack table.

The following ingredients are for a small apple pie to bake in a cake pan with a diameter of 17 cm: 2 eggs, 100 gr all purpose flour, 25 gr melted butter, 75 gr sugar, 1 egg, 100 ml Greek vanilla yogurt, 8 gr baking powder, vanillin or vanilla seeds to flavour, some grated lemon peel, a soup spoon of icing sugar and a coffee spoon of cinnamon.

First of all, whip the egg with sugar and vanilla, adding some grated lemon peel if you wish. Pour the melted butter and keep on whipping. Add spoons of flour and the baking powder alternating with spoons of Greek vanilla yogurt until you have a smooth and homogeneous mixture.

Pour the mixture in a well buttered and floured cake mold and decor this latter with slices of apple. Sprinkle the cake with icing sugar and cinnamon together before placing it in the oven for about 45 minutes (static oven/180° C).

In the end, you may sprinkle more icing sugar on the apple cake if you like or serve it with some vanilla cream if you like best.
