Not all breads rise tall and full of soft crumbs. We tried our hand at preparing an excellent bread based on rye flour and various cereals and the result was this delicious bread with a good amount of humidity and a dense, compact texture. Even though out of oven, it kept on baking, for little time, in its heat and making a good sound. We let the rye bread rest for a few hours and, finally, now we can enjoy it with some organic apricot jam. Baking this bread was like experiencing a beautiful epiphany of the simple flavors of the table during my childhood.
