
It is the Midsummer weekend and in Apulia temperatures are around 40°C! To drink more water, having fresh vegetables and fruit is the best way to feel good. Here we have one more delicious salad, which invites by saying “eat me!” Indeed, few, simple ingredients make a feast in the dish. We prepared the salad with cherry tomatoes, carrots, lettuce, chives, mango, mint and we served it with generous slices of local warm melting scamorza cheese, which previously sank twice into the egg and into breadcrumbs before being slightly fried into few drops of extra virgin olive oil. In the end, add a drizzle of extravirgin olive oil or balsamic vinegar on top and enjoy the dish and beautiful company!

I think we are warm here in Sweden because today we have had 30 ° C. 40 ° it’s way too hot.
